Mousse

Mousses is derived from the French word of same spelling which means "lather" or "foam". It is a prepared food that incorporates air bubbles to give it a light and airy texture. It can range from light and fluffy to creamy and thick, depending on preparation techniques. It may come in variations such as Chiffon where meringue is used to give aeration to the base or bavarois which is a type with custard as a base.
     Some chef may categorise this dessert into 4 different category which are of course the plain mousses, chiffons, bavarois and parfait. The difference between them depends on the type of ingredient which they uses to achieve aeration whether it is meringue or whipped cream. Mousses may be aerated by both whipped cream and meringue. Chiffons can only be solely aerated by meringue. Bavarois may be explained simply as a flavoured custard sauce aerated with whipped cream to achieve that melt in your mouth texture. No matter what they are fluffed with, one thing is certain that is the ever favourite sinfully rich dessert will always be on the top of my wishlist for a perfect ending to a great meal. 
     So what is mousse? To me it is the perfect melt in your mouth dessert perfect for any occasions and seasons. Zesty lemon chiffons for spring, Berries parfait for summer, a nice creamy cheese mousses for summer and perhaps a rich dark Chocolate flavoured ones for winter to help add some calories in order to stock you up to keep warm. What is mousse to others? Perhaps it could simply be that rich creamy heavenly dessert which always stirs up a debate whether it will affect your figure or goes straight into your heart. No matter, just give it a try and I'm sure you will love it.
