Recipe
125 gm Unsalted Butter
75 gm Sugar
1/2 tsp Vanilla Essence
10 gm Sodium Bicarbonate
115 gm Soft Flour
125 gm Peanut Butter
Method
1) Beat butter, sugar and vanilla essence together at low speed till smooth.Do not ovrbeat till fluffy as this will cause cookies to be too brittle to the touch and crumble easily.
2) Add in flour, sodium bicarbonate and peanut butter and mix till smooth. Scoop cookies batter into a piping bag.
3) Line a baking tray with parchment paper and pipe cookies onto the tray. Be sure to allow some space in between as cookies will 'spread' during baking.
4) Bake in oven at 180C (356F) for 10 to 15 minutes till slightly brown and crisp.
5) Cool cookies completely before storing in an airtight container for a great snack time munch.
