Almond Cream
Almond cream is a light and tasty pastry filling associated with tarts and pies. It is to add to the exciting flavour for a variety of filling including fruits, custard and even chocolate. Almond cream can even be consumed by itself without the addition of any other ingredients or simply great as cookies. In pastry kitchens, it is essential as the lining for tarts and pies as it adds to the flavour and prevents the sugar dough from bulging up when blind baking. As versatile as its many uses, it is also great to enhance the flavour of any baked goods and is sure to liven up any products from the oven.

Recipe 200 gm Unsalted Butter 200 gm Sugar 2 nos Whole Egg 40 gm Soft Flour 1 tsp Vanilla Essence 200 gm Ground Almond Method 1) Beat butter and sugar together in a mixing bowl till smooth and fluffy. 2) When batter is smooth add in vanilla essence. 3) Add in eggs slowly one at a time. 4) Lastly add in flour and ground almond and beat till a smooth batter.
5) The almond cream is now ready to be turned into a tasty filling for any type of pastry.
