Charlotte Royale

Traditionally, a Charlotte Royale recipe is a dessert which can be served either hot or cold usually with bread, sponge or cookies as the outer layer of the goody inside. The outer layer is usually brushed with gelatine or today using Jelfix to give it an irresistable shine. Our Strawberry Mousse Charlotte Royale recipe here is a variation of this classical dessert using swiss rolls as the cover so it is like 2 dessert in 1. It is sure to brighten up any dessert spread you may be planning for any occasion.

Recipe
125 gm Fresh Strawberries or Strawbery Puree
25 ml Milk
40 gm Sugar
5 gm Gelatine Powder
200 ml UHT Whipping Cream
1 pcs Swiss Roll

Strawberry Charlotte Royale
Method
1) Wrap the inside of a bowl with cling film for easy removal.
2) Slice and arrange swiss roll inside the bowl as shown in the video.
3) Make sure to arrange it as tight as possible.
4) Blend strawberries and milk together in a blender till smooth. If using puree then just mix it together with milk.
5) Pour strawberry puree in a pot and add in gelatine and sugar. Bring it to a boil over gentle fire and stir till gelatine and sugar are melted.



6) Leave aside to cool down completely.
7) In a mixer, whisk thill whipping cream is stiff. Be careful not to overbeat it. 
8) Fold half of the whipping cream into the cooled strawberry puree and pour it back into the remaining whipped cream and fold gently till smooth. The strawberry mousse is now done.
9) Pour the mousse into the bowl lined with swiss rolls. Allow to set in chiller overnight before removing from bowl and serve.
